Kimchi Recipe: Easy, No Fermentation Required

Kimchi is a traditional Korean dish made by fermenting cabbage with a mix of spices, vegetables and chilli. It’s tangy and spicy and so good for you. However, making your kimchi can take months to ferment correctly! Although, here is an easy recipe that only takes a few days to make – no fermentation required!

Ingredients

  • One Head Of Napa Cabbage
  • Two Carrots
  • 2 Tbsp Korean Red Chilli Powder
  • 2 Tbsp Sugar
  • 2 Tbsp Salt
  • 1 Tbsp Fish Sauce (Or Soy Sauce)
  • 1 Tbsp Garlic And Ginger, Minced

Equipment Required

  • Pot
  • Spoon
  • Knife
  • Cutting Board
  • Bowl (For Soaking Rice)
  • Crockpot (Or Slow Cooker)
  • Colander (For Washing Kimchi)
  • Strainer Or Cheesecloth To Strain The Paste From Your Kimchi Brine.

If you’re making a large batch, you can use both together: first strain through cheesecloth and then use a filter to remove additional debris from your paste before transferring it back into its container or jars for storage in the fridge.

Instructions

Step 1: Put the cabbage, garlic and ginger into a large bowl.

Step 2: Add the salt and sugar to the salad mixture and mix well with your hands until it is well combined.

Step 3: Add the chilli powder, vinegar and water to the salad mixture. Mix well with your hands until it is well combined again (you may want to use gloves here).

Step 4: Leave to stand for 1 hour or so before mixing again (this helps break down some of the carbohydrates to ferment).

Step 5: Place into an airtight container with a lid on top; place an object like a plate on top if possible, as this will press down on your kimchi once fermented.
